The Scoville Bitterness Scale, which was developed by a pharmacologist named Wilbur Scoville in 1912, is made by diluting some pepper extract with sugar water and measuring the ratio of sugar water and pepper when the bitterness is not felt. According to this scale used to determine the degree of bitterness of peppers, the world's hottest sauce has 6,000,000 scovilles. This rate is more caustic than a pepper spray conforming to US standards.
