Maryoli Achipiz is a member of the ASPROFECH in Tierradentro, Cauca. As a smallholder, she grows, harvests, and processes coffee on her farm. The harvet period coincides with the rainy season, so the climate is cold and wet during processing. Maryioli processes coffee using ecomill technology, which makes the most efficient use of water. The depulper is made with rust-resistant iron and she has new plastic fermentation tanks This lot was dry fermented for 20 hours, washed, and dried in parabolic dryers and on patios in accordance with the recommendations of the agronomy technician of the Colombia National Federation of Coffee Growers.
Maryoli’s farm has a natural freshwater spring that provides water for her home and the farm. Coffee is planted mostly under full sun, with yucca, banana, orange, lemon trees also planted throughout the farm, producing fresh food for her household.
