Antigua is one of the oldest coffee-growing regions in Guatemala and is famous for producing some of the best coffee in the world. The most pleasant Guatemalan coffee is produced from fruits harvested between medium and full ripeness. Fruits of this ripeness are rich in taste. This standard is equivalent to the SHG (Strictly High Grown – which guarantees that coffee is grown on farms with a minimum altitude of 1350 meters and above), which defines the altitude above sea level where coffee is grown. Coffee grown at a high altitude matures slowly at a lower temperature. Beans grown in such conditions intensify their taste and aroma. The second is the EP (European Preparation) standard, which means that the defective and spoiled ones of the unprocessed coffee and the impurities are cleaned one by one by hand and patiently before starting processing.
