On the shores of Kabatepe, nestled in the historic Gallipoli Peninsula and home to pine and fig trees, our olive trees grow under the influence of the iodine-rich sea air and strong northern winds. To preserve the high fruitiness and polyphenol levels, we carefully harvest our high-quality olives early and at the right time. Without any delay, we immediately proceed to cold pressing, minimizing their exposure to oxygen, and store them in special tanks.
