About the Cold Process
Fruits harvested at 26-30 Brix are sorted according to density. The pulped coffees are placed in Grain-pro bags and left in a room at 10-13°C for 76 hours. After the extended fermentation period at low temperatures, they are washed to separate the mucilage. The coffee is dried directly under the sun for 3 days and in the shade for 23-25 days.
